If there one one thing to know about my family it is that Swanners LOVE sweets. We really do! We hardly ever skip dessert after a meal.
However, Cody and I just booked a trip to Cancun this fall and my brothers wedding is just before that, so I KNOW I need to put a little bit of a halt to my sugar/dessert intake so I can be bikini and bridesmaid dress ready!
I found this recipe originally from one of my favorite dessert blogs; Chocolate Covered Katie, and thought I would give it a go!
These donuts are light, sweet and not so awful for you!
1/4 cup milk of choice
1 tsp white or apple cider vinegar
1/4 tsp pure vanilla extract
1/3 cup pure maple syrup or agave or honey (I used agave)
3 1/2 tbsp oil – I used olive
1 cup flour, loosely packed (works with all-purpose, spelt, or gf all-purpose mix) (125g)
1/4 tsp salt
1 tsp baking powder
optional pinch cardamom or cinnamon
1/2 cup blueberries, fresh or frozen-thawed (60g) ( used TJ’s frozen organic wild blueberries)
1 and ½ cups powdered sugar
3-4 tablespoons milk of your choice
2 teaspoons vanilla extract
-donut pan: I used this one
-cooking spray of you choice (preferably olive/coconut oil)
-two mixing bowls
Yield: 6 donuts
First things first! You will want to pre-heat that good ole oven to 350.
Then, go ahead and combine all of the wet ingredients in one of your mixing bowls and mix it with a spatula.
Take your second bowl and add all of your dry ingredients and mix with a regular spoon.
Then, you can go ahead and add the wet ingredients along with the blueberries to the dry ingredients. (Katie said to carefully place the blueberries into the batter after you put the dough in the pan to avoid turning the batter purple….but I LOVE the purple batter, so I just went ahead and mixed them in)
Now that your batter is all mixed up go ahead and grease your pan with your cooking spray that the donuts pop right out after they cook.
Go ahead and take a regular spoon and start to spoon the batter into each donut mold in the pan.
Pop those bad boys in the oven! Bake at 350 for 10-12 minutes.
Don’t forget to set your timer. (I may or may not have forgotten to do this a time or two before…haha!)
While the donuts are in the oven you can make that sweet, sweet glaze!
Go ahead and add all three ingredients (powdered sugar, milk and vanilla in a smaller mixing bowl.
Whisk ingredients together until it is mostly lump free.
When your timer (that you most definitely set) goes off, go ahead and take those beautiful, fluffy donuts out of the oven.
Go ahead and let them cool for a few before you pop them out of the pan.
Once they do cool go ahead and place them on your wire cooking rack. Put your cookie sheet underneath the cooling rack.
Now take a spoon and starting drizzling that ooey gooey glaze over those fresh out of the oven donuts.
Now go get your coffee and your favorite breakfast buddy and bake some donuts!
